How to make pumpkin soup bowls.
Using a pencil, gently score a line around the pumpkin. Do this in a straight line or a zigzag pattern.
Using a sharp pairing knife, carefully cut through the pumpkin along the score line. If this is difficult to do, pop the pumpkin into the microwave for a few seconds – repeating as necessary – until the knife can cut the pumpkin.
After cutting the pumpkin, remove the top and scoop out the seeds.
Fill the pumpkin. If using the pumpkin for a soup bowl, replace the top once filled to keep the soup warm.

I just store them in the fridge in a large ziplock bag. They will last for over a month this way.
