My husband likes this pub near us that has a British theme and menu. You know the kind of place that has great menu items like Fried Pickles, Tavern Crisps, Fish & Chips, and Bangers & Mash. The interior as dark wood paneling that kind of reminds me of a formal library. Don’t get me wrong, I like the pub too but it’s definitely more his style – mainly because it has a large number of beers on tap. Yikes!
However, one of the reasons I like going there is that they have this really great Goat Cheese Dip. Served warm, this dip is one of those classic dips – like spinach dip or artichoke dip – it just hits the spot every time.
While they make their Goat Cheese Dip with a marinara sauce and pita wedges, I like mine better with sun-dried tomatoes. And this dip is so easy to make – 4 simple ingredients make a delicious spread.

Combine the ingredients and blend well.

Have any left? Spoon it over grilled chicken and bake to warm. It’s excellent!!
