Cooking doesn’t have to be hard. In fact, the term “set it and forget it” could not be more accurate than for this simple but delicious rib recipe. I use this a lot for weekend meals because its stress-free cooking at its best. So when you are trying to get chores done while shuttling kids to sporting events, this rib recipe really is the easiest way to make great tasting ribs.
Just toss some ribs into the slow cooker.
Then pour a beer over them. That’s it! No need to worry about rubs or even BBQ sauce at this point. And it doesn’t even matter what kind of beer – I use all kinds – from our favorites to seasonal brews. They all seem to work fine. Most people cannot taste the beer but if you don’t like beer, don’t worry, you could use root beer or even cola.
Set the slow cooker on high and forget it for about 2 hours. Check to see when the meat starts to pull away from the bone. Then turn it to warm until you are ready to bake them.
I know some people like the ribs falling off the bone but I like them tender but still able to be lifted out of the slow cooker without falling apart. I look at the meat around the bone. If they are just starting to pull away from the bone then they are probably ready to come out. If we are not ready to eat at this point, I turn the slow cooker to warm and leave them until we are ready.
Next, remove the ribs and lay them on a baking sheet. Cover the ribs in BBQ sauce – again, any sauce will do so the choice is yours.
We like Sweet Baby Ray’s but I’ve used a lot of different ones.
Once covered with sauce, bake in the oven at 400 F for about 20 minutes to allow the BBQ sauce to caramelize. You can also do this on the grill.
