I discovered roasted acorn squash a few years ago. We were visiting Gainesville and in the hotel room, I found this magazine that had an article about local chefs. Each chef provided a recipe so I brought the magazine home to try them. I had made several of them when my mother-in-law came to visit and I decided to make a meal from a few I had not yet tried. Now, I know that testing a new recipe (let alone 3 new recipes) when your mother-in-law is visiting probably isn’t the wisest idea. But fortunately for me, my MIL is an awesome lady. I knew that if the meal was awful, we could just order pizza. But lucky for me the acorn squash was a hit – as were the pork tenderloin and the collard greens & grits side dish.

Roasted acorn squash quickly became a family favorite. And since it is an easy side dish to make, I’m always looking for new ways to serve it. Knowing this, my mother-in-law recently sent me a picture of acorn squash with cranberries, nuts, and what looked like honey drizzled on it. It looked so good that it got me thinking. I wondered  “what if….” instead of the honey, we used Ginger-Apple Syrup. So of course we had to try it.

Making Acorn Squash with Ginger Apple Syrup

First we have to make the Ginger Apple Syrup.

Next we line a baking sheet with aluminum foil. Cut the squash in half and use a spoon to scoop out the seed. Rinse the squash and place cut side down on the baking sheet. Roast for 20 minutes. Carefully turn the squash over so the cut side is up on a baking sheet.

Add ¼ cup of ginger-apple syrup in each half. Add ½ the cranberries, apple, and walnuts in each half.

Return to oven and roast until a fork easily pierces the squash and caramelizes around the edges, about 25 minutes. Remove from oven. Divide remaining syrup between the 2 halves. Cut each half into quarters and serve while warm.

Ingredients
  • 1 cup Ginger-Apple Syrup
  • 1 acorn squash, halved & seeded
  • ¼ cup cranberries
  • 1 apple, peeled, cored, and diced
  • ¼ cup walnuts, coarsely chopped
Instructions
  1. Preheat oven to 400° F. Cover a baking sheet with foil.
  2. Cut the Squash in half and use a spoon to scoop out the seed from the squash.
  3. Place squash cut side down on the baking sheet. Roast for 20 minutes.
  4. Carefully turn the squash over so the cut side is up on a baking sheet. Add ¼ cup of ginger-apple syrup in each half. Add ½ the cranberries, apple, and walnuts in each half.
  5. Return to oven and roast until a fork easily pierces the squash and caramelizes around the edges, about 25 minutes.
  6. Remove from oven. Divide remaining syrup between the 2 halves.
  7. Cut each half into quarters and serve while warm.
