End of Summer Salad
1 can mandarin orange slices, drained
2 cups Strawberries, quartered
2 sour green apples, cored and chopped
½ cup Vidalia onion, chopped
2 tablespoon chopped cilantro
¼ cup red wine vinegar
¼ cup apple juice
3 tablespoon olive oil
2 tablespoon sugar
¼ teaspoon salt
Pepper to garnish
1 large bag salad greens
4 oz crumbled gorgonzola cheese
In a large bowl combine first 4 ingredients. In a small bowl, whisk next 5 ingredients and pour into large bowl. Toss gently to coat; spoon over salad mixture. Top with cheese and pepper.
