Shrimp Toast

3 cups water
1/2 lb fresh shrimp, unpeeled
1 can water chestnuts, diced
2 green onions, chopped
Salt & pepper
1/2 teaspoon sugar
1 egg white, at room temp.
1 French bread loaf

Bring water to a boil; add shrimp. Cook 3 to 5 minutes or until pink. Drain, rinse in cold water. Chill. Peel and de-vein shrimp. Combine shrimp, water chestnuts, green onion, salt & pepper, and sugar. Transfer to a food processor and process until finely ground (about 30 seconds).

Beat egg white until stiff peaks form; fold into shrimp mixture.

Slice bread diagonally in 1/4 “slices. Broil 6 inches from heat for a minute or two. Cool. Spread slices with shrimp mixture and bake at 425° F until toast starts to brown (about 5 minutes).
