1 lb cooked lobster
6 tablespoon mayo
2 tablespoons lime juice
2 green onion, finely chopped
2 celery stalks, finely diced
1/8 teaspoon cayenne pepper
salt & pepper to taste
4 hot dog buns, top-split
¼ stick butter, melted
1 cup shredded lettuce, divided
In a large bowl combine first 6 ingredients. Season with salt & pepper. Spread butter on buns and toast butter side down in preheated pan until golden (about 5 minutes) Put buns on serving dish and add shredded lettuce. Divide salad and fill buns. Use left-over lettuce to garnish.
