But a Hawaiian BBQ gives you a chance to utilize traditional luau stuff in a whole new way. For example, at a traditional luau, guests are encouraged to wear Hawaiian shirts. At a Hawaiian Barbecue, let the chairs wear the them. Scour thrift stores and mass discounters for low price shirts to use as chair covers. The more patterns you can find, the better.
A Hawaiian BBQ takes advantage of some of the island's other natural resouces. A Hawaiian Barbecue uses Keawe wood for the grill and Kona Coffee in the spice rub.
Keawe wood, a cousin of Mesquite, is a thick, hard wood. It gives off a dense smoke that adds flavor to the food. It is used in an authentic Hawaiian luau. One reason given for using Keawe wood is the absense of sap. Sap can change the flavor of foods. If you can't find Keawe, use Mesquite or even Cherry or Apple.
Another island flavor, Kona coffee, is used as a part of the rubs and sauces. Rubs are made with the coffee grounds while the sauces use liquid. The coffee gives a unique flavor to BBQ; adding a richness more than the actual coffee flavor.
